  • 1/2 cup diced bacon
  • 1 tablespoon unsalted butter
  • 1 large onion, finely chopped
  • 6 cloves garlic, minced
  • 3 tablespoons flour
  • 6 cups low-sodium chicken broth
  • 1 cube beef bouillon, crushed
  • 45 small Russet potatoes, sliced
  • 1 cup half and half or heavy cream
  • 3 cups chopped kale
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper
  • 1 teaspoon mustard powder
  • 1 teaspoon dried parsley
  • 1 teaspoon ground fennel
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red chili flakes (optional)
  • Grated Parmesan

Instructions

  1. In a heavy pot, cook the Italian sausage over medium-high heat until browned. Drain excess fat and set aside.
  2. Cook bacon in the same pot until crispy; reserve drippings and set bacon aside.
  3. Sauté onions in reserved drippings until soft, then add garlic and cook until fragrant.
  4. Sprinkle flour over the mixture, stirring for about 2 minutes.
  5. Pour in chicken broth and bring to a boil. Add sliced potatoes and cook until fork-tender (about 10 minutes).
  6. Stir in heavy cream, cooked sausage, bacon, and kale; simmer for an additional 2 minutes.
