  • 1 3/4 cups non-dairy milk
  • 2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water)
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup blueberries or other fruits (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Prepare flax eggs by mixing ground flaxseed with water; let sit for 5 minutes.
  3. In a large bowl, combine rolled oats, nuts, cinnamon, nutmeg, baking powder, and salt.
  4. In another bowl, whisk together applesauce, non-dairy milk, prepared flax eggs, maple syrup, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients and stir until just combined; fold in blueberries or desired fruits.
  6. Transfer to the greased baking pan and bake for 35–45 minutes until set.
