  • 2 tablespoons olive oil
  • 1 medium red onion
  • 1 large carrot
  • 1 medium red bell pepper
  • 2 cups broccoli florets
  • 1½ cups cherry tomatoes
  • 2 medium zucchini
  • Seasonings: Italian seasoning, salt, garlic, lemon juice

Instructions

  1. Soak cashews in warm water for at least 2 hours. Drain and blend with fresh water, lemon juice, garlic, salt, onion powder, and black pepper until smooth.
  2. Cook the penne pasta according to package instructions until al dente.
  3. In a large pot, heat olive oil over medium heat; sauté onion, carrot, red bell pepper, and broccoli for about 4 minutes. Add zucchini and cook for an additional 2 minutes before adding cherry tomatoes and Italian seasoning.
