  • 1 tbsp lemon juice
  • 2 tbsp maple syrup

  1. Drain the chickpea water into a bowl, reserving the chickpeas for another use.
  2. In a separate bowl, combine aquafaba, lemon juice, and maple syrup; stir gently.
  3. Use a stand mixer to whip the mixture into stiff peaks over about 10 minutes.
  4. Melt dark chocolate chips using a double boiler until smooth.
  5. Gently fold the melted chocolate into the whipped aquafaba using a spatula.
