Ingredients
- 1 cup salted butter (room temperature)
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1 teaspoon pure vanilla extract
- 6 tablespoons salted butter (for caramel)
- ⅛ teaspoon salt
- ½ cup light corn syrup
- 1 cup granulated sugar
- 1 cup heavy whipping cream (divided)
- 1¼ cups milk or dark chocolate
Instructions
- Preheat oven to 350°F (175°C). Cream together butter and powdered sugar until fluffy. Mix in flour and vanilla until combined. Press into a greased 9×13 inch baking pan and bake for 20 minutes.
- For the caramel filling, combine salted butter, salt, corn syrup, sugar, and half of the cream in a saucepan over medium heat. Stir until boiling and thickened (5-7 minutes). Remove from heat; stir in vanilla.
- Pour caramel over cooled shortbread base. Allow to cool completely.
- Melt chocolate with remaining cream in another saucepan over low heat. Pour over caramel layer and spread evenly.
- Refrigerate for at least 4 hours before cutting into squares.
