Ingredients
- 20 oz cheese tortellini
- 10 oz cherry tomatoes
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped basil
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- 3–4 minced garlic cloves
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini in a large pot of boiling salted water until al dente. Strain using a colander and rinse under cool water.
- While the tortellini cooks, chop the spinach, halve the cherry tomatoes, and mince the garlic.
