  • 2 x 5oz cans tuna (drained)
  • 1 medium onion (chopped)
  • 1/2 stalk celery (chopped)
  • 1 clove garlic (minced)
  • 1 tablespoon parsley (chopped)
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil (divided)
  • 1/3 cup shredded mozzarella
  • Sliced bread
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna, chopped onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Mix well and season with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Spread butter on one side of a slice of bread and place it butter-side down in the skillet.
  3. Spoon about 2 tablespoons of the tuna mixture onto the bread in the skillet. Butter another slice of bread and place it on top of the mixture.
  4. Cook until the bottom slice is golden brown; carefully flip to toast the other side until both sides are evenly browned.
