  • ½ cup sliced green onions
  • ½ cup diced red bell pepper
  • ½ cup salted peanuts
  • Optional: 12 ounces diced cooked chicken
  • Dressing: ⅓ cup natural peanut butter
  • 3 tablespoons olive oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons coconut aminos
  • 1 teaspoon sugar substitute
  • 1 teaspoon minced garlic
  • ½ teaspoon ginger paste
  • Red pepper flakes

Instructions

  1. In a large bowl, combine the shredded cabbage, cucumber, green onions, red bell pepper, and peanuts (and chicken if desired). Toss to mix well.
