  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sriracha (adjust to taste)
  • ½ cup coconut milk
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • Steamed rice or noodles for serving
  • 2 tablespoons chopped peanuts
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes on each side until golden brown. Remove from heat.
  2. In the same skillet, sauté minced garlic and ginger for about 1 minute. Stir in peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil. Mix until smooth and let simmer until slightly thickened.
  3. Return the cooked chicken to the skillet, coating it well with the sauce for an additional 2-3 minutes.
  4. Serve over steamed rice or noodles and garnish with chopped peanuts and cilantro.
