  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 10 oz ground chicken
  • ¼ cup Tamari or soy sauce
  • 2 tablespoons Thai sweet red chili sauce
  • Juice of 1 lime
  • â…“ cup chopped cashews
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (chopped)
  • ¼½ cup shredded carrots
  • Butter lettuce leaves

Instructions

  1. Heat sesame oil in a non-stick skillet over medium-high heat. Add diced onion and sauté until translucent.
  2. Stir in minced garlic and ginger; cook for an additional two minutes.
  3. Add ground chicken, breaking it apart while cooking until golden brown.
  4. In a bowl, combine Tamari, Thai chili sauce, lime juice, and maple syrup. Pour over the cooked chicken along with chopped cashews.
  5. Toss to combine and cook on low heat for two more minutes. Remove from heat; stir in carrots, scallions, and cilantro.
  6. Serve by spooning the mixture into butter lettuce leaves and topping with sesame seeds.
