Ingredients
- 1 ½ cups uncooked millet
- ½ cup diced cucumber
- 1 small diced red pepper
- 2 sliced spring onions
- 1/3 – ½ cup sliced black olives
- ½ cup capers
- Juice of 1 lemon
- 2 tsp dijon mustard
- 2 tbsp apple cider vinegar
- Salt and black pepper to taste
Instructions
- Rinse and drain millet thoroughly under cold water. Boil 4 ½ cups of water in a large pot, add the millet, and cook for about 20 minutes until tender. Drain excess liquid and let cool.
- Dice the cucumber and red pepper; slice the spring onions.
- In a mixing bowl, whisk together lemon juice, dijon mustard, apple cider vinegar, salt, and black pepper.
- Once the millet has cooled slightly, combine it with the dressing and all prepared vegetables. Stir gently until well coated.
- Chill the salad in the fridge before serving for enhanced flavors.
