Ingredients

  • 1 ½ cups uncooked millet
  • ½ cup diced cucumber
  • 1 small diced red pepper
  • 2 sliced spring onions
  • 1/3½ cup sliced black olives
  • ½ cup capers
  • Juice of 1 lemon
  • 2 tsp dijon mustard
  • 2 tbsp apple cider vinegar
  • Salt and black pepper to taste

Instructions

  1. Rinse and drain millet thoroughly under cold water. Boil 4 ½ cups of water in a large pot, add the millet, and cook for about 20 minutes until tender. Drain excess liquid and let cool.
  2. Dice the cucumber and red pepper; slice the spring onions.
  3. In a mixing bowl, whisk together lemon juice, dijon mustard, apple cider vinegar, salt, and black pepper.
  4. Once the millet has cooled slightly, combine it with the dressing and all prepared vegetables. Stir gently until well coated.
  5. Chill the salad in the fridge before serving for enhanced flavors.
