Ingredients
- 1 and 2/3 cup heavy cream-chilled
- about 1/3 cup powdered sugar (to taste)
- 1 teaspoon vanilla
- ½ cup unsalted butter-softened
- 8 oz. cream cheese-softened
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 3 cups graham cracker crumbs
- ½ cup+ 2 tablespoons unsalted butter-melted
- ¼ cup strawberry jam
- Red gel food coloring
- 2/3 cup diced fresh strawberries
- 2 cups blueberry pie filling
- 1 cup of canned crushed pineapple-drained from juice
- 2 (3 oz. pkg) berry blue Jello (or other flavor to your taste)
- 1 and 1/4 cup boiling water
- 1 cup of whipped cream
- 2 ½ cups whipped cream (for layering)
- Fresh strawberries halved
- Fresh blueberries
- ¼ cup chocolate chips
Instructions
- Prepare the graham cracker layer by combining crumbs, melted butter, and strawberry jam. Press into a 9×13-inch baking dish.
- Make the creamy filling by beating together softened cream cheese, powdered sugar, vanilla, and half of the whipped cream until smooth. Fold in remaining whipped cream.
- Spread half of the creamy filling over the crust, followed by diced strawberries and blueberry pie filling. Add another layer of creamy filling.
- Dissolve berry blue Jello in boiling water; pour over layered mixture and refrigerate until set.
- Once set, spread whipped cream on top and garnish with fresh berries and chocolate chips before serving.
