  • 1 lb. lean ground beef
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cans (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cups cooked long grain white rice
  • Italian seasoning, salt, and pepper to taste

Instructions

  1. In a Dutch oven over medium heat, brown the ground beef until no longer pink. Drain excess grease if necessary.
  2. Sauté diced onions and chopped bell peppers in olive oil for about 5 minutes until softened. Add minced garlic and sauté for another 30 seconds.
  3. Stir in the browned beef along with diced tomatoes, tomato sauce, and beef broth. Season with Worcestershire sauce, sugar (if using), Italian seasoning, salt, and pepper.
  4. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes.
  5. If desired, stir in cooked rice and parsley until heated through. Serve hot garnished with cheese if desired.
