Description

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons dijon mustard
  • 1 small red onion (finely chopped)
  • 5 crispy cooked bacon strips (crumbled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped dill pickles
  • Salt and black pepper to taste

Instructions

  1. Cook the Potatoes: In a large pot, cover the cubed potatoes with cold water. Bring to a boil and cook for 10–15 minutes until fork-tender. Drain and cool to room temperature.
  2. Prepare the Dressing: In a mixing bowl, whisk together mayonnaise, sour cream, dijon mustard, and apple cider vinegar until smooth.
  3. Combine Ingredients: Gently fold cooled potatoes into the dressing along with red onion, crumbled bacon, cheddar cheese, parsley, and dill pickles. Season with salt and pepper to taste.
  4. Chill: Cover and refrigerate for at least one hour before serving to allow flavors to meld.
