  • 4 cups Baby Spinach
  • 1/4 cup Parmesan Cheese (grated)
  • Salt and Black Pepper (to taste)
  • Optional: Red Pepper Flakes
  • Optional: Fresh Parsley

Instructions

  1. Cook orzo according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until browned (5–7 minutes).
  3. Stir in minced garlic and cook until fragrant (1–2 minutes).
  4. Add baby spinach and cook until wilted (2–3 minutes).
  5. Toss in the cooked orzo, mixing thoroughly.
  6. Remove from heat and sprinkle with Parmesan cheese; season with salt and pepper.
  7. Garnish with red pepper flakes or parsley if desired before serving.
