  • 1 red bell pepper
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) coconut milk

Instructions

  3. Add ground cumin, ground coriander, and smoked paprika; cook for another minute until fragrant.
  4. Stir in diced tomatoes, coconut milk, chicken broth, bay leaf, salt, and pepper; bring to a simmer.
  5. Add marinated chicken to the skillet; cover and let simmer for about 20 minutes or until cooked through.
