  • 2 large eggs

  • For topping: 1/4 cup honey
  • 1/4 cup softened unsalted butter

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt until combined.
  3. In another bowl, whisk together buttermilk, eggs, and melted butter until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Gently fold in sweet corn and shredded cheddar cheese.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 12–15 minutes or until golden brown; a toothpick should come out clean.
  8. While baking, mix softened butter with honey for the topping.
