Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together softened butter and brown sugar until fluffy.
- Beat in the egg, then add molasses, vinegar, and vanilla extract.
- In another bowl, whisk together flour, baking soda, salt, and spices.
- Gradually stir dry ingredients into wet mixture until just combined.
- Scoop tablespoons of dough onto parchment-lined baking sheets with space between each cookie.
- Bake for 10-12 minutes until edges are set but centers remain soft. Let cool on the sheet for a few minutes before transferring to wire racks.
