Ingredients

  • 5 cups flour

  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and brown sugar until fluffy.
  3. Beat in the egg, then add molasses, vinegar, and vanilla extract.
  4. In another bowl, whisk together flour, baking soda, salt, and spices.
  5. Gradually stir dry ingredients into wet mixture until just combined.
  6. Scoop tablespoons of dough onto parchment-lined baking sheets with space between each cookie.
  7. Bake for 10-12 minutes until edges are set but centers remain soft. Let cool on the sheet for a few minutes before transferring to wire racks.
