  • 3/4 cup (150g) packed light or dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups (250g) all-purpose flour, spooned & leveled
  • 2 teaspoons cornstarch (cornflour)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (135g) white chocolate chips, plus a few extra for garnish
  • 1 cup (140g) dried cranberries, plus a few extra for garnish

Instructions

  1. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter with sugars until smooth. Beat in egg and vanilla.
  3. In another bowl, whisk together flour, cornstarch, baking soda, and salt; gradually mix into wet ingredients.
  4. Fold in white chocolate chips and cranberries until combined.
  5. Chill dough in the refrigerator for at least 1 hour.
  6. Scoop dough into balls (about 1.5 tablespoons each) and place on prepared sheets 3 inches apart.
  7. Bake for 11-12 minutes until edges are lightly browned but centers remain soft.
  8. Cool on sheets for 5 minutes before transferring to a wire rack.
