  • 1 tablespoon olive oil
  • 1/2 cup salsa (or more if desired)
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Pinch of salt (to taste)
  • 1 can (15 oz) black beans
  • 1/3 cup jarred salsa
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 2 cups hot cooked rice
  • 1 tablespoon melted butter
  • 1 tablespoon fresh lime juice
  • 3 tablespoons cilantro, chopped
  • Salt (to taste)
  • Burrito-sized tortillas (whole wheat optional)
  • Monterey Jack, Cheddar, or Pepper Jack cheese, shredded
  • Pico de gallo or salsa
  • Guacamole
  • Sour cream

Instructions

  1. In a large skillet over medium heat, combine olive oil, shredded chicken, salsa, chili powder, smoked paprika, cumin, garlic powder, and salt. Cook for 3-4 minutes until heated through.
  2. In a small saucepan, simmer black beans with salsa, chili powder, and cumin for about 10 minutes.
  3. Mix hot cooked rice with melted butter, lime juice, chopped cilantro, and salt in a bowl.
  4. On each tortilla, layer cheese followed by the chicken filling, cilantro-lime rice, beans, guacamole, pico de gallo, and sour cream.
  5. Roll up tightly and grill on a preheated griddle for 3-4 minutes per side until golden brown.
