- 3 1/2 to 4 cups shredded rotisserie chicken
- 1 tablespoon olive oil
- 1/2 cup salsa (or more if desired)
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Pinch of salt (to taste)
- 1 can (15 oz) black beans
- 1/3 cup jarred salsa
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 2 cups hot cooked rice
- 1 tablespoon melted butter
- 1 tablespoon fresh lime juice
- 3 tablespoons cilantro, chopped
- Salt (to taste)
- Burrito-sized tortillas (whole wheat optional)
- Monterey Jack, Cheddar, or Pepper Jack cheese, shredded

Instructions
- In a large skillet over medium heat, combine olive oil, shredded chicken, salsa, chili powder, smoked paprika, cumin, garlic powder, and salt. Cook for 3-4 minutes until heated through.
- In a small saucepan, simmer black beans with salsa, chili powder, and cumin for about 10 minutes.
- Mix hot cooked rice with melted butter, lime juice, chopped cilantro, and salt in a bowl.
- On each tortilla, layer cheese followed by the chicken filling, cilantro-lime rice, beans, guacamole, pico de gallo, and sour cream.
- Roll up tightly and grill on a preheated griddle for 3-4 minutes per side until golden brown.
