  • 68 mini Persian cucumbers
  • 2 teaspoons kosher salt
  • 1 garlic clove, minced
  • 2 teaspoons sugar
  • 2 teaspoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 1/2 teaspoon fish sauce (optional)
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon chili paste (adjust to taste)
  • 1 tablespoon sesame seeds (mix of black and white)

Instructions

  1. Slice the cucumbers into thin rounds and place them in a mixing bowl. Sprinkle with kosher salt and mix well. Let sit for 30 minutes to draw out excess moisture.
  2. After 30 minutes, drain the cucumbers using a colander and rinse off the salt.
  3. In the same bowl, add minced garlic, sugar, soy sauce, rice wine vinegar, fish sauce (if using), sesame oil, and chili paste. Stir until all ingredients are combined.
  4. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
