  • 3 pounds potatoes (peeled and thinly sliced)
  • 4 tablespoons butter
  • ½ cup onion (diced)
  • 1 teaspoon garlic (minced)
  • 6 tablespoons flour
  • 1 cup chicken broth
  • 2 cups milk
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup cheddar cheese (grated)
  • Fresh thyme for garnish

Instructions

  1. Preheat the oven to 350°F and spray a 9×13 inch baking pan with nonstick spray.
  2. In a large saucepan over medium-low heat, melt butter and sauté onion and garlic until soft.
  3. Stir in flour, cooking for about 2 minutes.
  4. Gradually whisk in chicken broth and milk; bring to a boil while stirring constantly. Season with salt, pepper, and thyme.
  5. Remove from heat and stir in cheddar cheese until melted.
  6. Layer half of the sliced potatoes in the prepared pan, season, and pour half of the cheese sauce over them.
  7. Repeat with remaining potatoes and sauce; top with fresh thyme.
  8. Cover with foil and bake for 45 minutes, then uncover and bake an additional 30 minutes until golden brown.
  9. Let sit for 10-15 minutes before serving.
