- 4 tablespoons butter
- ½ cup onion (diced)
- 1 teaspoon garlic (minced)
- 6 tablespoons flour
- 1 cup chicken broth
- 2 cups milk
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup cheddar cheese (grated)
- Fresh thyme for garnish
Instructions
- Preheat the oven to 350°F and spray a 9×13 inch baking pan with nonstick spray.
- In a large saucepan over medium-low heat, melt butter and sauté onion and garlic until soft.
- Stir in flour, cooking for about 2 minutes.
- Gradually whisk in chicken broth and milk; bring to a boil while stirring constantly. Season with salt, pepper, and thyme.
- Remove from heat and stir in cheddar cheese until melted.
- Layer half of the sliced potatoes in the prepared pan, season, and pour half of the cheese sauce over them.
- Repeat with remaining potatoes and sauce; top with fresh thyme.
- Cover with foil and bake for 45 minutes, then uncover and bake an additional 30 minutes until golden brown.
- Let sit for 10-15 minutes before serving.
