  • 1 lb sausages (chorizo, smoked, wild Italian, etc.), sliced
  • 12 large red bell peppers, chopped
  • 1 large onion, chopped
  • 12 large eggs
  • 1 cup cheddar cheese
  • Olive oil and seasonings (paprika, onion powder, garlic powder, sea salt, pepper)

Instructions

  1. Preheat the oven to 425°F (220°C) and line baking sheets with parchment paper.
  2. On a baking sheet, combine diced potatoes, sausages, bell peppers, and onion. Drizzle with olive oil and seasonings; toss well.
  3. Roast for 40-45 minutes until golden brown, stirring halfway through.
