  • 1 pound lean ground beef
  • 1/4 cup panko bread crumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • pinch of salt
  • 1 large vidalia onion (diced)
  • 4 ounces sliced white mushrooms
  • 1 teaspoon fresh chopped thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons flour or cornstarch
  • 3 cups beef stock
  • 1 teaspoon worcestershire sauce
  • 1 tablespoon butter
  • kosher salt and pepper (to taste)
  • Chopped fresh parsley or chives

Instructions

  1. In a mixing bowl, combine ground beef, panko, tomato paste, Worcestershire sauce, mustard, onion powder, pepper, and salt. Shape into four oval patties.
  2. Heat olive oil in a cast iron skillet over medium heat. Cook patties until browned (about 3-4 minutes on each side). Set aside.
  3. In the same pan, sauté onions until translucent. Add mushrooms and cook until softened.
  4. Stir in thyme, garlic powder, and flour (or cornstarch); cook for one minute.
  5. Gradually add beef stock while scraping up brown bits from the skillet. Stir in additional Worcestershire sauce and bring to a boil.
  6. Reduce heat; return patties to the pan and simmer for about 5-7 minutes until cooked through.
