Ingredients

  • 3 white onions
  • 5 cloves of garlic
  • 3 mixed peppers
  • 500 g sweet potatoes
  • 6 salad tomatoes
  • 500 g carrots
  • 100 ml single cream
  • 800 ml vegetable stock
  • Extra virgin olive oil
  • Dried sage
  • Italian herbs
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. On a baking sheet, combine chopped onions, garlic, peppers, sweet potatoes, tomatoes, and carrots. Drizzle with olive oil and season with salt, pepper, dried sage, and Italian herbs.
  3. Roast the vegetables for 30-35 minutes until tender and caramelized.
  4. Transfer roasted veggies to a large pot and add vegetable stock. Blend until smooth using an immersion blender or standard blender.
  5. Stir in single cream and heat gently before serving.
