  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • Zest and juice of 2 large oranges
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix orange zest and juice with olive oil, garlic, thyme, rosemary, honey, soy sauce, salt, and pepper.
  3. Place the chicken in a roasting pan and coat with half of the marinade. Let marinate for at least 30 minutes.
  4. Stuff the chicken cavity with quartered onions.
  5. Pour chicken broth into the pan and roast for about 1 hour and 15 minutes until the internal temperature reaches 165°F (75°C), basting every 20 minutes.
  6. Allow resting for 10 minutes before carving.
