  • 2 heads cauliflower
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ cup olive oil
  • 1 teaspoon chopped parsley

Instructions

  1. Preheat your oven to 500ºF (260ºC) and adjust the rack to the lower third position.
  2. Remove the outer leaves from the cauliflower, trim the stem, and slice each head in half lengthwise. Cut 1½-inch thick steaks from each half.
  3. In a small bowl, mix together salt, pepper, garlic powder, and paprika.
  4. Drizzle olive oil on both sides of each steak and sprinkle the seasoning mixture evenly.
  5. Place the steaks on a rimmed baking sheet, cover with foil, and bake for 5 minutes. Then remove the foil and roast for another 10 minutes.
  6. Flip each steak over and roast until golden brown, approximately 6 to 8 minutes.
  7. Garnish with chopped parsley before serving.
