Ingredients
- 8 slices of toast
- 600 grams of roast beef
- Salt and freshly ground pepper
- 1 tablespoon mustard
- 4 tablespoons vegetable oil
- 2 onions
- 1 handful of lettuce (such as arugula and spinach)
Instructions
- Rinse the roast beef, pat dry, and season with salt and pepper. Sear in a skillet with vegetable oil until golden brown.
- Brush the seared beef with mustard, place on a rack in a roasting pan, and roast at 140°C (275°F) for about 30 minutes.
- While the beef roasts, slice the onions into rings. Sauté in the same skillet until golden brown.
- Rinse and pat dry the lettuce; chop coarsely.
- Toast the bread slices until golden brown. Once the beef has rested for 5 minutes, slice thinly against the grain.
- Assemble by layering roast beef, sautéed onions, and lettuce on four slices of toast; top with another slice of toast and cut diagonally before serving.
