  • ½ cup butter
  • 1 package powdered sugar
  • 2 tsp vanilla extract
  • 1 cup chopped toasted pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease three cake pans.
  2. In a mixing bowl, combine white cake mix, eggs, buttermilk, and vegetable oil. Beat with an electric mixer for two minutes.
  3. Fold in shredded coconut and chopped pecans.
  4. Divide batter evenly among the prepared pans and bake for 15-17 minutes until a toothpick comes out clean.
  5. Let cakes cool for ten minutes before transferring to wire racks to cool completely.
  6. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract; mix until fluffy.
