  • 2 ⅔ cups crushed graham crackers
  • ⅓ cup sugar
  • ⅞ cup butter (melted)
  • 16 ounces cream cheese (room temperature)
  • 2 eggs
  • ½ cup sugar (for cheesecake layer)
  • 15 ounces pumpkin puree
  • 1 cup evaporated milk
  • ¼ cup brown sugar
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9-inch springform pan with parchment paper.
  2. In a mixing bowl, combine crushed graham crackers, sugar, and melted butter. Press into the bottom of the springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time and mix in vanilla extract. Pour over the crust.
  4. In a separate bowl, whisk pumpkin puree, evaporated milk, brown sugar, white sugar, spices, and eggs until smooth. Carefully pour over the cheesecake layer.
  5. Bake for about 80 minutes or until set in the center. Allow to cool before refrigerating for at least two hours or overnight.
