  • 7 cups powdered sugar (for frosting)

Instructions

  1. Preheat oven to 350°F. Grease and flour three 8-inch cake pans.
  2. In a large bowl, whisk together pumpkin puree, sugar, vegetable oil, eggs, and vanilla until smooth.
  3. In another bowl, combine flour, baking powder, baking soda, spices, and salt.
  4. Gradually mix dry ingredients into wet mixture until just combined.
  5. Pour batter evenly into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. For the salted caramel drizzle: In a saucepan over medium heat, melt sugar until golden brown, then stir in butter and cream until smooth. Add salt and let cool.
