  • 12 tablespoons whipping cream (as needed)
  • 1 cup white sugar (for optional homemade salted caramel sauce)
  • 1/3 cup unsalted butter (cut into 5 pieces, for optional homemade salted caramel sauce)
  • 1/2 cup whipping cream (for optional homemade salted caramel sauce)
  • 1 teaspoon vanilla extract (for optional homemade salted caramel sauce)
  • 1/4 teaspoon coarse salt (for optional homemade salted caramel sauce)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In another bowl, mix oil, brown sugar, eggs, vanilla extract, and pumpkin puree until smooth.
  4. Gradually combine wet and dry ingredients without overmixing.
  5. Pour batter into a greased baking pan and bake for about 35 minutes or until a toothpick comes out clean.
  6. For the frosting, beat softened butter and cream cheese until fluffy. Gradually add caramel sauce and powdered sugar until desired consistency is reached.
