Ingredients

  • 1/3 cup protein powder
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup melted coconut oil (or butter)
  • 2 eggs
  • 2/3 cup sugar (or erythritol)
  • 1 tsp vanilla extract
  • Optional: 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine almond flour, protein powder, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together melted coconut oil, eggs, sugar (or erythritol), and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until just combined; fold in chocolate chips if desired.
  5. Spread the batter evenly in the prepared pan and bake for about 20 minutes.
  6. Let cool before cutting into squares.
