Description

Ingredients

  • 2 lbs. Yukon gold potatoes
  • 3 cloves garlic
  • 2 tsp smoked paprika
  • 2 tsp cayenne pepper
  • 12 flour tortillas
  • Oil for frying

Instructions

  1. Parboil the quartered potatoes in salted water until fork-tender (10-15 minutes). Drain.
  2. Mash the potatoes in a bowl and mix in minced garlic, smoked paprika, cayenne, and salt until smooth.
  3. Place about 1/2 cup of filling into each tortilla and roll tightly, seam side down.
  4. Heat oil in a fry pan over medium heat. Fry each flauta seam-side down for 3-5 minutes until golden brown. Flip to cook all sides.
  5. Drain on paper towels and serve hot with salsa, guacamole, or sour cream.
