- 2 lbs. Yukon gold potatoes
- 3 cloves garlic
- 2 tsp smoked paprika
- 2 tsp cayenne pepper
- 12 flour tortillas
- Oil for frying
Instructions
- Parboil the quartered potatoes in salted water until fork-tender (10-15 minutes). Drain.
- Mash the potatoes in a bowl and mix in minced garlic, smoked paprika, cayenne, and salt until smooth.
- Place about 1/2 cup of filling into each tortilla and roll tightly, seam side down.
- Heat oil in a fry pan over medium heat. Fry each flauta seam-side down for 3-5 minutes until golden brown. Flip to cook all sides.
- Drain on paper towels and serve hot with salsa, guacamole, or sour cream.
