  • 3 russet potatoes (cooked and cubed)
  • ¼ cup diced bacon
  • ¼ cup diced green onion
  • ½ cup sour cream
  • 1 block cheddar cheese (cut into strips)
  • â…” cup cornstarch
  • 100 g panko breadcrumbs
  • Salt and pepper to taste
  • Vegetable oil for frying or baking

Instructions

  1. In a mixing bowl, combine cooked potatoes, bacon, green onion, sour cream, salt, and pepper. Mash until mostly smooth.
  2. Take a spoonful of the mixture and flatten it in your palm. Place a cheese strip in the center and wrap the potato mix around it.
  3. Set up three bowls: one with flour, one with beaten egg, and one with cornstarch mixed with panko. Coat each stick in flour, dip into egg, then coat with the panko mixture.
  4. Heat oil in a deep fryer or large pot to 350°F (180°C). Fry the sticks until golden brown (about 3 minutes) or bake at 400°F (200°C) for approximately 15 minutes on a parchment-lined baking sheet.
