  • 1 cup unsalted butter (room temperature)
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup granulated sugar (for crust)
  • 2 1/4 cups granulated sugar (for filling)
  • 6 eggs
  • Juice from 3 lemons
  • 1/2 pint fresh raspberries (or about 1 cup frozen raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9"x13" baking pan with parchment paper.
  2. Blend raspberries with 1 tablespoon of water until smooth. Strain through a sieve to remove seeds; set aside.
  3. For the crust, mix butter, flour, salt, and sugar until smooth. Press into the bottom of the prepared pan and bake for 15-20 minutes until golden.
  4. For the filling, whisk together sugar and flour in a bowl. Add eggs and lemon juice; mix well. Gradually stir in raspberry puree until the desired color is achieved.
  5. Pour filling over baked crust and bake for an additional 25-30 minutes until edges are set but center is slightly wobbly. Allow to cool completely before slicing.
