Ingredients
- 1 sheet of thawed puff pastry
- 1 (8-ounce) container of softened Tofutti dairy-free cream cheese
- 1–2 tablespoons light agave nectar (or sweetener of choice)
- 1 1/2 teaspoons pure vanilla extract
- 2 cups sliced peaches
- 1/2 cup fresh blueberries
- 1–2 teaspoons melted vegan butter
Instructions
- Thaw the puff pastry at room temperature for 30-40 minutes. Soften the cream cheese simultaneously.
- Preheat the oven to 400ºF and line a baking sheet with parchment paper.
- In a mixing bowl, use an electric mixer to whip together the cream cheese, agave nectar, and vanilla until smooth.
- Roll out the puff pastry into a rectangle, leaving a 1-inch border around it. Prick the center with a fork and brush the border with melted vegan butter, sprinkling sugar on top.
