  • 1 Tbsp olive oil
  • 23 garlic cloves, minced
  • 9 oz (250 grams) baby spinach
  • 5 oz (140 grams) cream cheese
  • 1 oz (30 grams) grated parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of cooking water before draining.
  2. In a large skillet, heat olive oil over medium heat and sauté garlic for 1-2 minutes until fragrant.
  3. Add spinach and salt gradually until wilted.
  4. Stir in cream cheese and reserved pasta water until smooth, then add parmesan and nutmeg.
  5. Toss drained pasta into the skillet with the sauce until well coated.
  6. Serve immediately with extra olive oil and parmesan on top.
