  • 1 tsp garlic powder

  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • juice from ½ lemon
  • ½ cup grated Parmesan
  • freshly ground black pepper (for serving)

Instructions

  1. 1. Season salmon with garlic powder, paprika, salt, and pepper.
  2. 2. Heat olive oil and butter in a nonstick skillet over medium-high heat. Sear salmon for 3-4 minutes per side until golden brown; remove and set aside.
  3. 3. In the same skillet, sauté onion and garlic until soft. Add orzo and thyme; toast for a minute.
  4. 4. Pour in chicken broth and bring to a boil. Reduce heat to simmer until orzo is almost al dente (about 8 minutes).
  5. 5. Stir in spinach, lemon juice, and Parmesan; return salmon to the skillet to heat through for an additional 2-3 minutes.
