- 3 cups chicken stock or water
- 1 (15-oz) can diced tomatoes (undrained)
- 1 (12-oz) box short pasta shapes
- Salt & pepper (to taste)
- ½ cup grated Parmesan
- ¼ cup cream cheese
Instructions
- Heat the olive oil in a large pot over medium heat. Sauté the onion, garlic, and sun-dried tomatoes until softened, about 2 minutes. Stir in the tomato paste and Italian seasoning; cook for another minute.
- Add the chicken stock, scraping any browned bits from the pot. Mix in the diced tomatoes and pasta; season with salt and pepper.
- Bring to a boil, then reduce heat to simmer. Cook until pasta is tender, about 10–15 minutes. If it looks dry, add more broth as needed.
- Remove from heat and stir in Parmesan and cream cheese. Let sit for a few minutes before serving.
