  • 6 chicken thighs
  • 1½ cups uncooked basmati rice
  • 3 cups low sodium chicken stock
  • 1 cup chopped onion
  • 2 tsp smoked paprika
  • 1½ tsp mixed herbs (or Italian seasoning)
  • 2 Tbsp olive oil
  • Butter
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper
  • Green onions for garnish

Instructions

  1. Combine smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper in a small bowl. Rinse rice until water runs clear.
  2. Coat chicken thighs with the seasoning mixture and set aside.
  3. Heat olive oil in a large pot over medium-high heat. Sear chicken thighs skin-side down for about 3 minutes per side until golden brown; remove from pot.
  4. In the same pot, sauté chopped onions until translucent. Add butter and rinsed rice; toast for 1–2 minutes.
  5. Pour in chicken stock and add reserved seasoning; stir well.
  6. Place seared chicken on top of rice mixture. Cover and cook on low-medium heat for 15–20 minutes until rice is tender.
