Ingredients
- 6 chicken thighs
- 1½ cups uncooked basmati rice
- 3 cups low sodium chicken stock
- 1 cup chopped onion
- 2 tsp smoked paprika
- 1½ tsp mixed herbs (or Italian seasoning)
- 2 Tbsp olive oil
- Butter
- Garlic powder
- Onion powder
- Salt
- Pepper
- Green onions for garnish
Instructions
- Combine smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper in a small bowl. Rinse rice until water runs clear.
- Coat chicken thighs with the seasoning mixture and set aside.
- Heat olive oil in a large pot over medium-high heat. Sear chicken thighs skin-side down for about 3 minutes per side until golden brown; remove from pot.
- In the same pot, sauté chopped onions until translucent. Add butter and rinsed rice; toast for 1–2 minutes.
- Pour in chicken stock and add reserved seasoning; stir well.
- Place seared chicken on top of rice mixture. Cover and cook on low-medium heat for 15–20 minutes until rice is tender.
