Ingredients
- 2 lb boneless, skinless chicken breasts
- 1/3 cup balsamic vinegar
- 2 tbsp honey
- 8 oz grape tomatoes
- 8 oz fresh mozzarella balls
- 2 tbsp avocado oil
- Fresh basil
- Garlic
- Italian seasoning
- Salt
- Pepper
Instructions
- Preheat the oven to 400°F.
- In a bowl, whisk together balsamic vinegar, honey, minced garlic, Italian seasoning, Dijon mustard, salt, and pepper.
- In a separate bowl, toss grape tomatoes with mozzarella balls and chopped basil; season with salt and pepper.
- Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear until golden brown (1-2 minutes per side).
- Pour the balsamic sauce over the chicken and scrape any browned bits from the pan.
- Add the tomato mixture on top of the chicken.
- Bake uncovered for 18-23 minutes or until the chicken reaches an internal temperature of 165°F.
