  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 8 oz grape tomatoes
  • 8 oz fresh mozzarella balls
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • Fresh basil for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. In a mixing bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper.
  3. Toss grape tomatoes and mozzarella balls in a separate bowl with salt and pepper.
  4. In a large oven-safe skillet over medium-high heat, heat olive oil and sear seasoned chicken breasts until golden brown on both sides (about 5–7 minutes per side).
  5. Pour the balsamic sauce over the chicken and let it simmer briefly.
  6. Remove from heat and layer the tomato and mozzarella mixture over the chicken.
  7. Transfer the skillet to the preheated oven and bake uncovered for 18–23 minutes or until the chicken reaches an internal temperature of 165°F.
