  • 2 tbsp vanilla extract
  • 2 tsp almond extract
  • 1 ⅓ cups ground almonds
  • 2 ½ cups all-purpose flour (or gluten-free alternative)
  • 3 tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp sea salt
  • 1 cup raspberry jam

Instructions

  1. Preheat the oven to 350°F and line two 8-inch cake pans with parchment paper.
  2. In a large mixing bowl, whisk together sugar, melted vegan butter, dairy-free yogurt, vanilla extract, and almond extract until smooth.
  3. Gradually add ground almonds, flour, baking powder, baking soda, and sea salt to the mixture. Stir in the vegan buttermilk until just combined.
  4. Divide the batter evenly between the prepared pans and bake for 40–42 minutes or until a toothpick comes out clean.
  5. Allow cakes to cool for ten minutes in the pans before transferring them to a cooling rack. Once cool, slice each layer in half if desired.
  6. Prepare your vegan cream cheese frosting and assemble the cake by layering frosting and raspberry jam between layers. Finish with a crumb coat of frosting and chill briefly before adding final decorations.
