  • 1 batch vegan cream cheese frosting

Instructions

  1. Preheat oven to 350°F and prepare three 8-inch cake pans with oil and parchment.
  2. Create vegan buttermilk by mixing vegan milk with apple cider vinegar.
  3. In one bowl, whisk together dry ingredients: flour, baking powder, baking soda, spices, and salt.
  4. In another bowl, combine melted vegan butter and sugars until smooth. Add yogurt and vanilla; mix well.
  5. Gradually incorporate dry ingredients into the wet mixture while alternating with vegan buttermilk until just combined. Fold in grated carrots.
