- 225 g (1 3/4 cups) plain/all-purpose flour (sieved)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 175 g (3/4 cup) softened butter
- 150 g (3/4 cup) granulated sugar
- 150 ml (2/3 cup) milk
- 2 large eggs (lightly beaten)
- 1 1/2 teaspoons vanilla extract
Instructions
- Preheat your oven to 170°C (325°F). Grease and line a loaf tin with parchment paper.
- In a bowl, sift together the flour, baking powder, and salt.
- Cream the softened butter and sugar until light and fluffy.
- Gradually add the beaten eggs to the mixture, mixing on low speed. If curdling occurs, add a spoonful of flour.
- Mix half of the milk with half of the flour until combined; then add the rest and fold gently until smooth.
- Pour the batter into the prepared loaf tin and bake for about 60–65 minutes or until a skewer inserted comes out clean.
- Allow to cool slightly in the tin before transferring to a cooling rack.
