  • 225 g (1 3/4 cups) plain/all-purpose flour (sieved)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 175 g (3/4 cup) softened butter
  • 150 g (3/4 cup) granulated sugar
  • 150 ml (2/3 cup) milk
  • 2 large eggs (lightly beaten)
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 170°C (325°F). Grease and line a loaf tin with parchment paper.
  2. In a bowl, sift together the flour, baking powder, and salt.
  3. Cream the softened butter and sugar until light and fluffy.
  4. Gradually add the beaten eggs to the mixture, mixing on low speed. If curdling occurs, add a spoonful of flour.
  5. Mix half of the milk with half of the flour until combined; then add the rest and fold gently until smooth.
  6. Pour the batter into the prepared loaf tin and bake for about 60–65 minutes or until a skewer inserted comes out clean.
  7. Allow to cool slightly in the tin before transferring to a cooling rack.
