Ingredients

  • 85 grams jelly crystals
  • 125 mls cream (thickened or heavy cream)
  • 12 Tiramisu sponge fingers or 1 cup fresh sponge chopped
  • 1/2 cup port/sherry/muscat (or juice for non-alcoholic)
  • 1 1/2 cups custard (store-bought or homemade)
  • 400 grams mixed berries
  • 200 mls thickened cream
  • 1 teaspoon custard powder

Instructions

  1. Prepare the jelly as per instructions and pour into dessert dishes. Chill until set.
  2. When jelly is nearly set, mix with cream and pour over the jelly layer. Allow it to set.
  3. Crush sponge fingers and soak in port or juice, then layer them over the flummery.
  4. Add custard on top of sponge fingers followed by a layer of berries.
  5. Whip thickened cream with custard powder to stiff peaks and pipe onto trifles. Garnish with berries and mint leaves.
