Ingredients
- 3/4 cup unsalted butter
- 1 cup sugar
- 1 whole egg
- 1 egg yolk
- 1 tbsp vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 8 oz cream cheese
- 1/4 cup sugar (for frosting)
- Assorted fresh fruit (for topping)
Instructions
- In a stand mixer, cream together unsalted butter and sugar until light and fluffy. Add the egg, egg yolk, and vanilla extract, mixing well.
- In another bowl, whisk together flour, salt, and baking powder before gradually adding to the wet mixture until just combined. Wrap dough in plastic wrap and refrigerate for at least one hour.
- Preheat oven to 350°F. Roll out chilled dough on a floured surface to about 1/2 inch thick. Cut into desired shapes and bake on parchment-lined sheets for 9-10 minutes or until set.
- While cookies cool, beat together cream cheese, sugar, and vanilla until smooth. Once cookies are cool, spread cream cheese frosting on top and decorate with your choice of fresh fruits.
