Ingredients

Scale
  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped (oil-packed for best flavor)
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Gather and prepare all ingredients—mince the garlic and chop the sun-dried tomatoes.
  2. Heat a non-stick skillet over medium heat; add olive oil and butter. Place the salmon fillets skin-side down and cook for about 4-5 minutes until golden brown. Flip carefully and cook for an additional 4-5 minutes until cooked through.
  3. Remove salmon from the skillet; add minced garlic, sauté for 30 seconds, then stir in sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, thyme, basil, salt, and pepper. Bring to a simmer.
  4. Return salmon to the skillet; let it simmer in the sauce for 2-3 minutes before serving.
  5. Plate the dish garnished with fresh parsley alongside your choice of sides.
