Ingredients
- 2 cups raspberries (fresh or frozen)
- 2 1/4 cups all-purpose flour
- 1 cup unsalted butter (melted)
- 1 1/2 cups granulated sugar
- 6 large eggs
- 3/4 cup freshly squeezed lemon juice
- Corn starch
- Salt
Instructions
- Prepare the raspberry puree by cooking down 2 cups of raspberries in a saucepan until thickened. Strain and set aside.
- Preheat oven to 350°F (175°C). Combine flour, sugar, corn starch, and salt in a bowl. Mix in melted butter until crumbly. Press into a greased 9×13 inch baking pan and bake for 15 minutes.
- In another bowl, whisk together sugar and corn starch. Add eggs one at a time while mixing well. Stir in lemon juice and raspberry puree.
- Pour the custard filling over the crust and bake for an additional 30 minutes until set. Allow to cool completely before slicing.
